Genus of about 300 species of evergreen and deciduous perennials, native to the sandy and coastal places of Europe, Asia and Africa. Asparagus acutifolius, widespread throughout the Mediterranean basin, is a bushy perennial herbaceous plant up to 100-150 cm tall. Sinuous stems prickly at the base, with a liana-like habit that lean on the surrounding plants. Small leaves, very numerous, particularly rigid, almost prickly. Small yellowish flowers, spherical fruits, black when ripe. The young stems, which are called shoots, are edible and emerge from the end of winter until spring. They are collected in the countryside and uncultivated lands to make excellent risottos, omelettes and soups.
Pedoclimatic needs
Grow in well-drained soil with good organic matter content, in sun or partial shade. Not very rustic species, sensitive to prolonged frosts. Up to -6°/-8°c.Botanical Information
